This cider was made in the Valley of the Moon on September 2, 2020, under the first harvest moon. The organic apple juice from Occidental, California was first fermented in French neutral oak barrels for 8 days before being pumped into an open top bin combined with freshly pressed skins of Carignan and Viognier grapes. The juice and skins further fermented together for an additional 4 days. This sparkling cider has notes of tart cherry, red currants and Jelly Belly’s with earthy undertones.
